Just throwing this up as a basic structure, something to start from.

Structure
I wouldn't get too concerned about the structure. Wiki makes it very easy to play with the structure at a later date. Lets set a broad structure which we can refine later. To some extent the structure will be determined by the article that are submitted. For example if you started getting many articles on famous cavers you might want to create a biography section and move those articles into it.

Sounds good - but, just for arguments sake, how about

- Country (hmm - should we limit this to UK only)
- Region (eg peak district)
- Catchment - eg Castleton)

Is Catchment always a reliably known quantity?
Culture
I think Clubs, Pubs and Shops would be better sited under Culture than in Organisations. Also, perhaps Conservation should become a major topic in it's own right and have an entry on the Main Page. Anyone agree/disagree.
Agreed Pubs & Shops could be in Culture. However Clubs are definitely organisations.
